Founded by Anne and Hermann over 20 years ago, Le Petit Duc has since created an actual philosophy for the consmption of sweet delights: recipes embellished through historical research to get back to the origins of the savoir-faire, the simple ingredients, the high quality and the genius of the French pâtissiers who composed such sweet music.
Before the rise of manufacturing at the end of the 19th century, sugar was a rare commodity which was used sparingly. They followed the same principal during the countless hours they spent studying the recipes that preceded the Calisson d’Aix, finally resulting in their very own, slightly sweet, Calisson de Saint-Rémy. They bring back pleasant memories of times past to older people and fully enhance the delicious taste of the almonds.
At Le Petit Duc, the sweetmeats are derived from ancient recipes and savoir-faire and are subject to meticulous care, down to the ingredients chosen and the artisanal production in small quantities. No effort is spared to ensure that each and every one reveals its character completely…
