Originally created by Marc Perret in 2009, today Paris Honey owns hives near Notre-Dame in Le Marais on the roofs of the 4th arrondissement’s town hall, next to the Eiffel Tower and the Trocadero on the roofs of the École Militaire, and at the Finance Ministry in Bercy. That makes four apiaries with two million bees in total.
The bees certainly have enough places where they can pick up pollen as there are a huge range of plants judiciously located around the capital: 500,000 trees and shrubs representing 150 different species.
As a result, there are countless flowers in woods, parks, gardens and on balconies, and flowering occurs in stages all the way through to October, enabling several different harvests of this fine, subtle Paris Honey to take place. Serving advice: Paris Honey can simply be spread on slices of bread, brioche and crepes, or mixed in sauces or marinades.
